Ume and Avocado Dip

Mash avocado with umeboshi: the ume adds the tang usually given by lemon. A dip for vegetables or crackers.

Umeboshi replaces lemon in this avocado dip: its saltiness and sourness are all the seasoning it needs.

Ingredients (serves 2–3)

  • 1 avocado
  • 1–2 umeboshi
  • 1 tsp olive oil
  • A little black pepper

Method

  1. Pit the umeboshi and chop them finely.
  2. Remove the avocado stone and skin and mash with a fork.
  3. Mix in the umeboshi and olive oil, and season with black pepper.

To serve

With vegetable sticks, crackers or toast.

Tips

  • Add the umeboshi a little at a time and taste as you go.
  • Honey umeboshi give a milder taste.

Umeboshi and ume vinegar vary a lot in saltiness. If you are watching your salt, adjust the amount.
