Ume Chazuke (Rice with Tea)

Umeboshi on rice with hot tea poured over: an easy dish for days with little appetite.

Simply top rice with umeboshi and pour over hot tea.

Ingredients (serves 1)

  • 1 bowl of cooked rice
  • 1 umeboshi
  • Toasted nori, sesame and mitsuba, to taste
  • 150–200 ml hot green tea (or dashi)

Method

  1. Put the rice in a bowl and place the umeboshi on top.
  2. Add the nori, sesame and mitsuba.
  3. Pour over the hot tea and eat, breaking up the umeboshi as you go.

Tips

  • Dashi gives a more savoury flavour.
  • Watch out for the umeboshi stone.

Salt levels vary widely between umeboshi. If you are watching your salt, use a low-salt type or adjust the amount.
