Features

Selected in Minabe, Wakayama, and sold as “Kishu Nanko ume”. Ripe fruit blush red on the sunny side.

Best uses

  • Umeboshi: use yellow, tree-ripened fruit for soft, plump pickles.
  • Umeshu & syrup: green fruit works; riper fruit gives a mellower aroma.
  • Jam: fully ripe fruit is fragrant and good for jam.

Choosing

For umeboshi, pick unblemished yellow fruit with a sweet smell, and start pickling soon after delivery.
